The Black Khaisab is a soft, black date, originally from the area of the modern-day United Arab Emirates. In its native homeland, it is often consumed in the Khalal stage – that is while it is still hard and crisp before it begins to ripen and soften. In this stage, it is quite sweet and slightly astringent with a striking red color. In the U. S. it is usually allowed to ripen fully and is prized for its rich, sweet flavor and distinctive black color.
