PICNIC CAKE

Season in the Coachella Valley is perfect for a wonderful picnic; feeling cool breezes under the California sun. The best thing to pair a beautiful day with is a delicious picnic cake made with Organic, Coachella Valley Dates. Ours pairs chocolate and pecan flavors sweetened naturally with organic date fruit.

INGREDIENTS

• 1 Cups Pitted Halawy Dates (Chopped)
• 1 Cups Hot Water
• 1 Teaspoon Baking Soda
• 2⁄3 Cups Shortening
• 2 Eggs
• 1 Cups Sugar
• 1 Teaspoon Vanilla
• 1 3⁄4 Cups Flour
• 1⁄2 Teaspoon Salt
• 1 Tablespoon Chocolate Cocoa
• 1 Cups Chocolate Chips
• 1 Cups Pecans (Chopped)

INSTRUCTIONS

Combine Date Fruit, hot water and baking soda and let set. In another bowl, cream together shortening, eggs, sugar and cocoa. Add to the cream mixture, alternating with the Date Fruit mixture. Mix into the batter half of the chocolate chips and half of the pecans. Sprinkle the other half of each on top of the batter before baking. Bake in a greased and floured 9x13x12 inch, or round pan at 350 degrees for 35-40 minutes.
