Sticky Toffee Date Cake Recipe

A must-try, sticky toffee cake recipe made with the all-natural, healthy sweetener, DATES! The Deglet Noor dates work best with this recipe. Deglets are sweet, semi-dry with a firm texture, and maintain their consistency in bread, cookie, and cake recipes.




INGREDIENTS

•   35 Dates      257 Milliliters Boiling Water      1 Teaspoon Bicarbonate of Soda  •  175 Grams Soft Light Brown Sugar   

   150 Grams Butter (Room Temperature)      3 Eggs (Beaten)     175 Grams  Self Raising Flour

 

INSTRUCTIONS

1. Pour the boiling water over three-quarters of the dates

2. Leave to soak for 30 minutes until soft

3. Preheat the oven to 175 degrees Celsius

4. Blend together the butter, sugar and the soaked dates (including the soaking water)

5. Add the eggs to the mixture and stir in the self-raising flour and bicarbonate of soda

6. Finally, stir in the remaining unsoaked dates

7. Pour into a square lined cake tin

8. Bake for 40 minutes until firm to the touch

9. Allow to cool, cut into squares, and serve!
