Easy 30 Minute Walnut Brittle

Only 1 ingredient away from classic peanut brittle, this recipe incorporates the much more nutritionally endowed walnut which has 2.5g Omega-3 ALA per serving, the only plant based Omega-3. Grab your candy thermometer and treat yourself to nutty super-nutrients!
1 ½ Cup Raw Walnuts (chopped)
1 Cup Sugar
1 ½ Tsp Baking Soda
1 Tsp Vanilla Extract
1 Tbsp Butter
½ Cup water
1 Cup Light-Colored Corn Syrup
Prepare a baking sheet with parchment paper and lightly coat it with cooking spray.
In a over medium heat saucepan combine sugar, syrup, water, butter, stirring until sugar dissolves.
Cook until a candy thermometer measures 275°F or for 20 minutes. and stir in the walnuts and cook for 2 additional minutes or until the mixture reaches 295°F.
Remove from heat; stir in vanilla and baking soda (this will cause the mixture to react with bubbling).
Pour the mixture over the baking sheet with coated parchment and spread using a wooden spoon coated in cooking spray, attempt to make spread at least ¼ inch thick.
Let cool completely then break into pieces using your wooden spoon.
