Make your Bruschetta a little extra and top with walnuts for the perfect heart-healthy crunchy compliment for a creamy cheese basil mix!
1 Cup Unbound Roasted Original Walnuts (minced)
2 Cups Ricotta Cheese
8 slices of Ciabatta (or similar artisan bread)
3 Peaches (Ripe)
½ Tsp Salt
1 ½ Tbsp Honey
2 Tbsp thin-cut Basil
2 Tsp Lemon Juice (Fresh)
6 Tbsp Olive Oil
In a medium sized mixing bowl, combine the cheese, honey, salt, juice, walnuts, and minced basil until fully mixed and refrigerate.
Prepare a skillet over medium high heat, while the skillet is warming up, brush the ciabatta slices with olive oil. Once the skillet is ready toast or grill each side of bread until golden.
Prepare to serve by adding a generous spoonful of our cheese mix to each slice of grilled bread and with peach slices arranged over top.
For added seasoning and presentation, feel free to top with a whole basil leaf, more walnuts, a pinch of ground pepper or a drizzle of your favorite vinegar reduction!
